Kat's Cacao Recipe
(for 1 cup)
1 cup of milk (almond milk, coconut milk, cow milk or any milk of your preference)
25g of cacao (ceremonial), chopped in small pieces
sweetener of your choice (we like to use date syrup or honey, and/or molasses
to give a nice licorice flavour, but it can also be stevia leaf, if you eat keto)pinch of sea salt / pink himalayan salt
small amount of fat to enhance the flavours
(ghee or MCT oil, or simply butter)spices of your preference, like a pinch of vanilla, some cinnamon (Ceylon cinnamon is best!), pinch of cardamom, pinch of nutmeg (for inspiration), tiniest pinch of cayenne pepper (on a cold day)
for extra flavour, you can add 1 piece of clove, 1 piece of anis, 1 rosebud
for adding stamina to your day (only in the morning!), add half a teaspoon of Maca powder (best to filter through a sieve first)
! IMPORTANT: Don’t let it boil, because it will break the cacao’s structure.
Once the drink starts to softly steam, lower the heat (or switch it off).
You do need to create some heat, so that the cacao can melt.
Use a whisk and gently stir the cacao, until it is creamy and even.
Feel free to sing to your cacao, pour your heart and soul into it,
and see what happens when you drink it …
